Paco Gil

This restaurant is named after a cook and a friend. His way of making rice is the one we still follow today.

Francisco Gil, Paco to everyone, was born in Yecla and learned his trade in the kitchens of Pinoso and Elche.

He was a friend of the house and passed away in October 2020. He taught us how to cook rice over a wood fire: the flames, the timing and the patience every paella pan needs.

We have refined it year after year since then, but his way is still our starting point. Our menu follows the same spirit: traditional, handmade cooking, wood-fired rice and chargrilled meat.
